How can I watch my mind with detachment?

True witnessing is choiceless awareness; when you simply remain silently aware, detachment becomes effortless and the mind subsides.

— Osho
According to Osho, you don’t ‘sometimes’ watch with detachment; either witnessing is present or the mind is. If you think ‘I am watching,’ that’s still mind, like dreaming you’re awake. True witnessing is choiceless awareness that cannot be lost; as it crystallizes, fantasies and their ‘entertainment’ fade and the screen goes empty. Drop rationalizations, stop adding or guiding thoughts, and simply remain silently aware—then detachment is effortless and mind subsides.

Real watching means being so quietly aware that the movie of thoughts stops; if it still feels entertaining, you’re still in the movie.
